Delicious, easy, and quick!  My Very BEST Banana Muffin recipe!  I love to make a quick batch, feed the kids, and then stick one in their lunch box for lunch or an afternoon snack!  Muffin cup full of sunshine!!!

I have made these and also frozen them and they turn out just scrumptious.

So, here it is friends.  I have waited a long time to add this aspect to my blog.  I hope you will enjoy it as much as I do.  Some of you may know that my background is in counseling and human development, education, and home economics.  Maybe it makes no sense, my blog was an accident, and to add this now may seem… odd?

Odd is my superpower.  But I have grown in this space.  (No, not just the size of my butt.) But in a million different ways.  I want this space to be a place where you find Grace, Truth, and all the in-betweens.  Had I known then what I know now?


Well, I didn’t plan this trip… so I can’t say what I would or wouldn’t do differently.  Some of you may choose to go, some may join on for the madness.  But given the chance, this is where I plan to fulfill that what I love to share.  Home as Sanctuary….  May your floors be sticky and your calling ordained.  Love,  Jami

Best Banana Muffins!

Yield 24 muffin

Ingredients

  • 2 1/2 cup Flour
  • 1 tsp Baking powder
  •  1 tsp Baking soda
  • 1/2 tsp Salt
  • 3 or 4 RIPE bananas; peeled and smashed
  •  1 1/4 cup Sugar
  •  2 Eggs
  • 1/2 cup buttermilk (if you don’t have buttermilk use 1/2 cup milk with a splash of vinegar)
  • • 1/2 cup Butter s0ft
  • • 1 Tbsp Brown sugar
  • • 1 tsp Vanilla extract

Instructions

  1. Preheat oven to 375 degrees. In a mixing bowl stir together flour, baking powder, baking soda, and salt. In a separate bowl,  cream together mashed bananas, egg, and butter mixture and brown and white sugar. Slowly blend in flour mixture until smooth. Place ice cream scooper or 1/4 measuring cup of batter into muffin cup or greased muffin tin. Bake for 25-30 minutes or until muffins springs back and is pretty golden brown.

    I just made them and they came out too ‘wet.’ Is one-half cup the right amount of flour?

      Hmmm… yes. That’s interesting. I’m going to make a batch, I wonder what happened?? I can’t say I ever had that happen and make them often. We’re your bananas über ripe?

        Yes, the bananas were very ripe; they were more like a baked ‘pudding’ rather than a muffin but my daughter loved them.
