We love this chili!  It is great on those cold winter evenings and this is such a big pot, we can get a lunch or two out of it also!

Add a can of rinsed kidney beans to it, which my mother-in-law called “Yankee Chili,” but since I watch my carbs I did not add beans to this batch!

It is tangy and

Ingredients

2 pounds Lean Ground Beef or Venison

2 tablespoons vegetable oil (canola, avocado, or oil of choice)

2 medium chopped white onions

2 15 ounce cans tomato sauce

2 15 ounce cans diced tomatoes

2 minced cloves of fresh garlic

1 can kidney beans, rinsed and drained, optional

1 Tablespoon cumin powder

3 tsps onion powder

1/4 cup chili powder

1 teaspoon Apple Cider Vinegar

2 tsp salt

2 tsp black pepper

Instructions

In a large pot, over medium heat warm oil and add garlic and onion.  Just before the onion is translucent, add meat and brown.  When meat is thoroughly cooked, drain. Return to pot and add tomato sauce, diced tomatoes, and spices.  Stir until mixed.  Bring to a gentle boil.  Reduce heat to low.  Cover and let simmer for 45-60 minutes.  Stirring occasionally.  Remove from heat, and let sit for about 10 minutes.   Serve with corn chips, warm flour tortillas, sour cream, freshly chopped or jar jalapeno, and/or shredded cheddar cheese.

Also makes an excellent taco filling or enchilada topping!

YUM!

Notes

All of the garnishes and suggested servings are suggestions!  Do what you will!  If I add kidney beans, I don’t add them until the last 30 minutes of cooking to prevent them from getting mushy!
